Jayme Burton Arnold’s Vegan Ice Cream Alternative: Banana Fro Yo
Ingredients:
*3 frozen bananas
*1 small 6 oz. container of Coconut Dream Vanilla or Almond Dream Vanilla (found in the yogurt section at the store )
*1/4 cup shredded toasted coconut ( use sweetened or unsweetened-your choice )
Directions:
Toasted coconut: place 1/4 cup coconut on sheet pan bake at 350 degrees until browned. Check at 2 minutes & stir coconut to make sure it browns evenly. Note that it may take longer than 2 minutes. Set aside and cool.
Put bananas and coconut or almond dream in blender and mix until smooth. Transfer to bowl and top with toasted coconut.
Makes 4 servings.
