Not sure what to do with all your fresh basil? Summer is coming to a close make the most of the your fresh basil and turn it into Pesto. By portioning out your pesto and freezing it you can enjoy it all year round.

Basil Pesto: 

•3 cups fresh basil leaves (cleaned)

•1 cup shredded Parmesan (do not use grated) 

•1 cup toasted (pine nuts/almonds or walnuts) your choice 

•1 tablespoon of minced garlic

•1 teaspoon salt

• teaspoon pepper

•1 cup olive oil 

Directions: 

Place first 6 ingredients in food processor. Turn on processor and drizzle in olive oil. 

Place into silicone trays & freeze overnight. Pop cubes out into freezer bag for long term storage. Use fresh pesto in soups, salads, fish/chicken entrees, dips, pastas and pizzas. Possibilities are endless!
