Jayme’s fresh country eggs with sautéd bell pepper, onion, spinach, and tomatoe is a meatless option for a hardy lunch or dinner.

Method & Ingredients:

•Spring mix 1 cup

•Eggs 1-2

•Onions 1/4 cup

•Bell peppers 1/4 cup

•Tomatoes

•Olive oil (3 drizzle rounds)

•Salt and Pepper to taste

•Dash of garlic powder

Sauté all of your vegetables in olive oil & garlic powder over medium heat. In seperate pan fry your egg. Plate up sauté topped with egg & garnished with extra salt and pepper. Option: Avocado on the side.
