Return home that evening.

ingredients:
*4 boneless chicken breasts
(either frozen or fresh.

*1 can of Rotel diced tomatoes
*5 cups organic chicken stock
cook in crock pot until chicken falls apart (~ 6 hrs.
give or take).
spoon on top of corn tortilla
or bed of greens. garnish with black beans, Greek yogurt, onions, tomatoes, avocado and cilantro.
brown bag it:
*add hominy or corn.
enjoy as a soup for tomorrow’s lunch.
